4 cups non-pasteurized milk
2 cups heavy cream
1 cup buttermilk
Mix all in a pot, and heat on low setting for 30 minutes stirring periodically. After it curdles, turn off the heat and cover for 30 minutes. Strain in fine mesh sieve lined with cheese cloth (4-fold). Then make a bag of cheese cloth and let it drain for 4 hours. Then add 1 tsp of salt, mix well and add a little more salt if needed to taste.
