Shrimp Bisque
Ingredients
• 1 med onion, chopped
• 2 garlic cloves, minced
• 1 celery stem
• 2 medium potatoes ( can be substituted with flour, or rice or starch)
• 1 28 oz of crushed tomatoes
• 2 tbsp of tomato paste
• fish stock (this is a prep step, from saved heads and bones of the fish I cooked earlier)
• 1/2 cup heavy whipping cream
• tablespoon chili powder
• cayenne pepper
• black pepper
• coriander
• 1 lbs of shrimp (I had salad shrimp, next time will try with giant)
• Fresh cilantro, cubed avocado and additional shrimp to serve
Instructions
• Cut veggies in cubes
• In a saucepan saute onion in oil until tender, add garlic, and cook for another minute. Add potato, and celery, a 3 -4 cups of fish stock, spices, and cook until potato is ready. Transfer to a pot.
• Add crushed tomatoes, pre-cut shrimp, tomato paste, the rest of fish stock, and let it simmer for another 5 min.
•Taste on spices, and add as needed.
• Blend with a hand blender to make the soup smooth. You can leave some chunks in it, if you like.
• Add heavy whipping cream and stir
• Serve with additional shrimp, toast, avocado and cilantro
