Osso buco, or 'leg of veal', is a large, rich cut of meat. Because it's often expensive, it's something you want to be very careful with, which is why it's the perfect candidate for preparation in the Anova Sous Vide Precision Cooker.

We recommend garnishing this sous vide osso buco with gremolata, a mixture of minced garlic, lemon, parsley, and pine nuts made easily in the food processor (but it's also fantastic without it).

(Pro-tip: When the osso buco is done, scoop out the bone marrow and enjoy it on toasted bread.)
