Ingredients:
For the Dressing:
• 3 tablespoons freshly squeezed lime juice
• 1/4 cup extra virgin olive oil
• 2 tablespoons honey
• Salt and pepper, to taste
For the Salad:
• 5 oz arugula
• 1 ripe mango, peeled, pit removed, and diced into bite-sized pieces
• 1 avocado, peeled, cored, and diced
• 1/4 cup red onions, thinly sliced
• 1/3 cup pine nuts, toasted
Directions:
1. Prepare the Dressing:
• Mix lime juice, olive oil, and honey in a small bowl until smooth. Season with salt and pepper. Let it sit while you prep the salad.
2. Toast the Pine Nuts:
• Put pine nuts in a dry skillet over medium heat. Stir often until golden and aromatic, about 2-3 minutes. Take off heat and let cool.
3. Assemble the Salad:
• Toss arugula, mango, avocado, and red onions in a large salad bowl.
• Pour the honey-lime dressing over the salad and gently mix to coat everything evenly.
4. Add the Pine Nuts and Serve:
• Sprinkle the toasted pine nuts over the salad just before serving for a crunchy touch.
• Give the salad a light toss again to distribute the pine nuts. Enjoy!
