Whipped Feta with Honeyed Figs & Pistachio
Thanksgiving whipped feta dip: creamy, sweet salty, five minute party saver.
You’ll need (serves 4):
• 1/2 cup feta, crumbled
• 1 cup low fat cottage cheese (blended smooth)
• 1 tbsp olive oil
• 1 small garlic clove, minced
• 4–5 mint leaves or 1/4 tsp dried
• Pinch salt and pepper
Topping:
• 1 tbsp honey (2 tbsp for sweeter)
• 1/4 cup dried figs, chopped
• 1/4 cup pistachios, chopped
• 1 tbsp water
Steps:
1. Warm topping: microwave honey, figs, pistachios, and water 20–30 seconds until syrupy; cool a bit.
2. Blend dip: process feta, cottage cheese, olive oil, garlic, mint, salt, and pepper until very creamy.
3. Serve: spoon into a shallow bowl, swirl, pour the fig pistachio honey in the center, drizzle a little oil.
4. Scoop with cucumber slices or low carb crackers; warm pita if you want.
Tip: Want extra protein and lighter carbs? Use 1 tsp honey and add 2 tbsp more cottage cheese.
