Frozen lemon mojito tiramisu: a frozen dessert that smells of summer! ❄️☀️

Ingredients for 4 people:
250 g of mascarpone
3 fresh eggs
80g of powdered sugar
12 Spoon Cookies
1 organic lime
5 cl white rum
10 cl of water
5 fresh mint leaves + some for decoration
1 tablespoon of liquid cane sugar
Lime zest for decoration

Step 1/3
3 fresh eggs - 80g of powdered sugar.
Separate the white from the yellow. Whip the yellows with sugar until the mixture becomes white. Reserve the whites for the next step.
Step 2/3
250 g of mascarpone - the mixture of yellow + sugar.
Add the mascarpone to the egg yolk mix and sugar. Mix until you get a smooth and homogeneous cream.
Step 3/3
3 egg whites - 10 cl water - 5 cl white rum - 12 tsp biscuits - 5 fresh mint leaves - 1 organic lime - 1 tsp liquid cane sugar.
Mount the whites in solid snow and incorporate them with mascarpone cream. Prepare a syrup by mixing water, rum, cane sugar, lime juice and mint. Dip biscuits in this syrup quickly. Cover the bottom of the glasswares with the soaked cookies, add a layer of cream, then start the operation once more. Finish off with zest of lime and some mint leaves. Place cool at least 2 hours before serving well chilled.
